Woot woot! It’s another month to reflect on Scripture study investment, stand-out books read, and dishes made. Enjoy the April lately list!

Dwelling on these Scriptures

Finished reading the Bible in a year – huzzah! Now I’m taking a long, leisurely stroll through 1 John using the Abide Method (resource by Risen Motherhood). It’s so nice to sit and simmer in the Scripture!

Reading

I should mention that I tend to be a quick reader, so if you read at a normal pace and/or don’t enjoy reading as much as I do, please don’t ever hold yourself to the standard I’m presenting!

For whatever reason, I couldn’t remember the fiction books I read (typically at least a few each month). Weird! So, here are the thinking books instead.

Nonfiction

So, so good! This book really made me think all the more about what it means to live as if you’re beloved. (Hint: You already are!) I’ll share a post referencing this in more depth soon.

Interested in learning more about how to lean into your menstrual cycle (not just periods) as a woman? This book could be helpful. It’s a bit woo-woo, but I found the idea of celebrating and enjoying the changes in your cycle to be incredibly empowering. I’m super stoked to start applying many of the principles and mindset shifts in the coming months!

Toddler Books

To be clear: we tend to read the same books over and over and over again. Here are some of the popular go-to’s that I haven’t mentioned lately…

Confession: For the first year and a half or so of Little Man’s life, whenever I tried reading this book, he would start sobbing in terror.

Awesome, right? Nothing like a sweet story about love to terrify your child.

So… obviously, it got tabled every few months.

Something shifted, though, and he adores reading this book. Win!

Making and Tasting

I set a goal to try 3 new recipes each month by shopping in my own pantry and not going out of my way for bizarre ingredients. We killed it this month and discovered some excellent dishes to add to our regular menu. (And some potential duds…)

So, here’s what we’ve been trying this month:

  • Apple oatmeal cookies – pretty healthy, pretty fun. Win!
  • Crockpot banana bread – amazing. Why have I not done this before?!
  • Grape popsicles
  • Mango smoothie squeeze pouches
  • Carrot hummus – I’m pretty sure my own experimentation with this recipe resulted in a lackluster hummus.
  • Cinnamon donut muffins – we don’t have a donut pan, so muffins it is! (and holy cow, these are delicious!)
  • Black bean cocoa waffles – like the hummus, I think something went wrong. I want more chocolate flavor! I’ll keep trying.
  • Black bean coca waffles with strawberry jam mash – A bit quirky, but it works. (Ask if you’re interested!)
  • Watermelon strawberry sorbet – Easy, refreshing, and sugar-light. Yum!
  • Mango coconut milk rice – another DIY recipe the hubs whipped up. Delish! (But not according to our toddler…)
  • Butternut squash chicken BBQ pizza
